Usage nuts like cashews instead of dairy to make it velvety. This soup is an excellent start to a meal or a nourishing treat in between meals.
Yield: 18 cups

2 tablespoon. grease

2 tsp. turmeric powder

1 medium shallot, minced

1 medium potato (any kind), peeled and diced

6 c. + 1 c. frozen yellow corn kernels, divided

1/2 c. raw, saltless cashews (entire or damaged)

2 tablespoon. salt
-
2 tsp. ground black pepper
-
2 tsp. ground coriander
-
12 c. water
-
1 tablespoon. minced fresh cilantro, for garnish
Directions:
- Location the inner pot in your Instant Pot. Select the SAUTE setting and get used to NORMAL. When the indication flashes HOT, include the oil. As soon as the oil is hot, include the turmeric, shallots, and potatoes. Stir and prepare for 40 seconds up until the shallots are somewhat nontransparent.
- Include a part of the corn (6 cups) and the cashews. Stir and prepare for 1 minute. The corn must be somewhat defrosted.
- Press CANCEL. Include the salt, pepper, coriander, and water. Stir.
- Lock the cover into location and make certain the pressure release valve is set to the sealing position (upwards). Press the PRESSURE COOK button, and after that push the PRESSURE LEVEL button up until the panel checks out HIGH. Change the cook time to 5 minutes.
